BOTANY
The Lemon is a small, straggling tree about 11 feet high, irregularly branched, the bark varying in colour from clear grey on the trunk, green on the younger branches to a purplish colour on the twigs. The evergreen leaves are ovate-oval, about two inches long, the margin serrate with sharp spines in the axils of the stalks.
OVERVIEW
Known in the Middle East as loomi and limo Omani (they originated in Oman), and sometimes referred to as dried lime or dried lemon, black limes are small limes that have been blanched in saltwater and left to dry until they are shriveled, brittle, lightweight, and a dusty black. They are key to some Middle Eastern dishes, providing a distinctly sour flavor.
Black limes are strongly flavored. They taste sour and citrusy like a lime but they lack the sweetness of fresh limes. Because they are preserved they also have a slightly bitter, fermented flavor.
Dried lemons are actually limes and are used heavily in Persian Gulf and also Iranian cuisine where they add a strong bitter flavor in addition to sourness. They are made by boiling ripe limes in salt water, and then sun drying until the insides turn black. The outside color varies from tan to black. They are sold whole or ground. Black Lime is a spice used in Middle Eastern dishes. It is made by boiling fresh lime in salt water and sun drying until the insides turn black. The outside color varies from tan to black. It is sold whole or ground.
